Yes, it’s time for another baking post!! And this time I tried out a healthier baking recipe. Last week, I came across the blog Chocolate-Covered Katie and when I saw that she had recipes for desserts like Cookie Dough Dip and Chocolate-Chip Blondies I knew I had to try out some of her recipes.
Yesterday, I tried the recipe for Deep-Dish Cookie Pie.
Those are the ingredients (plus canola oil, which I forgot to include in this picture). I know that baking with chickpeas (or garbanzo beans) is not new in the healthy baking world, but I’ve never been brave enough to try it.
However, when I saw this recipe it looked really easy so I thought I’d give it a go. All you have to do is dump everything in a food processor, mix in chocolate chips and bake it. Even I can do that.
It looked a little dry at first.
But then everything started to blend together and get smooth.
This was actually the first time I used a food processor (I’ve had this one for years) and I was pleasantly surprised. It can grind pretty well! Hmm, maybe that’s why everyone loves those dang things so much.
After grinding the hell out of the dough, I added the chocolate chips and spread the mixture in a springform pan.
Now that looks pretty good. It kind of looked a bit lumpy, but I was hoping it would all blend together during baking.
Well, it did and I could barely wait to cut into it…even if I looked like a crazy person wearing no makeup.

We both really liked it. Does it taste like a cookie pie made with flour? No. But is it a good substitute? Hell yes.
I love that this pie really tastes like cookie dough and if you heat it up before you eat it, the chocolate chips start melting and the whole thing is even more wonderful. It would also be fabulous with ice cream.
I will be making this recipe again and trying out some of Chocolate-Covered Katie’s other recipes too. A great find for these two fatpigs!
